Breakfast cake, surely not?

It seems that 'baked oats' were a TikTok sensation during the lockdown, I don't use it so was totally unaware, anyway it basically means that you can indeed have cake for breakfast without being too unhealthy.


I tried it this morning using my air fryer and was very impressed, basically a heavy cake, this will go on my list of regular breakfasts and works out at about 290 calories per portion.


Ingredients

  • ½ cup rolled oats

  • ½ teaspoon baking powder

  • ¼ cup milk

  • 1 Tbsp peanut butter

  • 1 Tbsp honey

  • ¼ tsp salt

  • ¼ tsp cinnamon

  • ¼ tsp vanilla extract

  • 1 Medium Egg

  • 1 Tbsp chocolate chips

Instructions

  1. Preheat the air fryer to 180°C

  2. Add all ingredients (except the chocolate chips) into the blender and blend until smooth

  3. Pour into two lightly greased ramekins

  4. Sprinkle the chocolate chips on top

  5. Bake for 10 minutes at 180°C, check with a wooden skewer after 8 minutes, they will be done if it comes out clean

  6. Allow to cool for 10 minutes


Tip

if you only need one, the other can be covered in cling film and put in the fridge for tomorrow, just microwave for 40 seconds.
